English Paper Piecing (EPP) utilizes paper shapes as templates to hand-stitch fabric patches onto. A very common English paper-pieced quilt example would be a Grandmother's Flower Garden quilt, with each patch having been stitched onto (or around) a paper hexagon shape. The papers are typically removed before quilting. Here's a great EPP resource: http://www.paperpieces.com/
